Low fat Christmas turkey & potatoes (Healthy)

  • 1 chicken Breast (200gr)
  • 25gr of grated carrot and 25gr of grated zucchini or 50gr of a single vegetable
  • 1/2 small onion (25gr)
  • Spices of your choice (pepper, salt, nutmeg, …)
  • 15gr Barbecue sauce (optional)
  • 200gr of Potatoes (without skin)
  • 1 egg white
  • 20gr of quark/greek yogurt 0%
  • 20ml of water
  • Some toothpicks


  1. Preheat oven to 350°F, rotating heat.
  2. Peel and cut the potatoes into pieces.
  3. Cook potatoes in a saucepan with water or microwave until they are soft.
  4. Once the potatoes are baked, pour them into a container and mash them.
  5. Add the egg white, 20ml water, the yoghurt as well as the spices and mix to get a smooth texture.
  6. Cover an oven plate with parchment paper.
  7. Form balls with mashed potatoes (about 12) and place them on the oven plate.
  8. Bake for 35-40 minutes until potatoes are golden.
  9. Meanwhile, in a frying pan, put the vegetables to cook with a little water so that it doesn’t sticks.
  10. Allow 10-15min to cook until they have lost their water.
  11. Cut the chicken breast in 2 to make it 2x less thick without loosening the 2 pieces (leave an attached edge).
  12. Cut the fire off, add the barbecue sauce to the vegetables and mix well (optional).
  13. Put the vegetable mixture on one half of the chicken breast and cover with the other half.
  14. Close the whole thing with toothpicks so that the vegetables doesn’t come out of the chicken breast.
  15. Spice up chicken at convenience.
  16. Put the chicken in a baking dish and bake for 20 minutes.
  17. Once the potatoes and chicken are cooked, serve on a plate and accompany with vegetables of your choice.
